LinuxExamples has an article on the use of Linux with HylaFAX to
create a low cost highly reliable network fax server. More of an
overview than a tutorial, but useful information all the same.

an organization receiving around 30 faxes per day.”HylaFAX has proven to be a remarkably stable and effective fax
server. Faxes are received reliably and in a way that is far more
flexible than a traditional fax machine – received faxes printed to
a laser printer are typically of a far better quality. Its “open
source” nature allows the system to be tailored to work in the way
that you want it to.HylaFAX requires a low powered machine to operate with minimal
IT support to maintain it. The only caveat is that it is worth
getting the best quality fax modem that you can.”
